“SOUTHERN CONFETTI SALAD”

best describes the colorful, fresh and delicious flavors of our vegan salad.

Traditionally Southerners eat Black-Eyed Peas on New Years Day. Our family certainly makes this salad to start the new year, but we also make it for spring and summer like cold bean salads, except with black-eyed peas.

INGREDIENTS

3/4 cup chopped green pepper
(I use a mixture of red, yellow and/or orange)

1/2 cup chopped celery

1/2 cup chopped red onion

1 1/2 cups canned black-eyed peas (drained)

1/4 cup chopped onion

1/4 cup vegetable oil

1/4 cup sugar

2 tablespoons cider vinegar

1 clove garlic, minced

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon hot sauce

DIRECTIONS

In a large bowl, combine bell peppers, celery, black-eyed peas, and both kinds of onions.

In a small bowl, combine the oil, sugar, vinegar, garlic, salt, black pepper, and hot sauce. Pour the dressing over the peas.

Toss and let stand refrigerated overnight. This will blend the flavors.

Serve as a side dish.
