Green Chili & Cheese Chicken Thighs
First prep the ingredients for the green chili salsa using tomatillos, hot peppers, onions, salt, and home-made chicken broth, OR… buy green chili salsa at the grocery.
(To make green chili salsa: roast the tomatillos and green chiles until blistered, remove skins and blend them with garlic, onion, stock, and salt until smooth. Adjust the consistency with chicken stock as needed.)
Then, using boneless, skinless chicken thighs, slice open and stuff each with grated cheddar cheese. Lay a slice of pepper jack cheese on top of each thigh. Place all on a roasting tray then pour green chili sauce over all pieces.
Cook in a pre-heated over for 45 minutes.
Remove, let cool, and serve.
