EGG DROP SOUP
An EASY variation using homemade chicken broth.
Make homemade chicken broth.
For egg drop soup:
pour some of your broth into a smaller pot & heat it to a soft boil
lower the heat and using a chopstick stir the broth around the edge to form a swirl.
(Have ready a well-beaten egg in any easy-to-pour container.)
Drizzle the egg mixture into the broth along the edge of the pot.
(Keep stirring to maintain the rotation. of the soup)
The egg will instantly cook — forming small, fiber-like egg strings… creating the classic egg drop soup we all desire.
