ITALIAN CAULIFLOWER STEAK FOR ONE – When home alone and you want a great Italian meal, cut a slice out of the middle of a head of cauliflower (3/4“ thick). Rinse it off, dry it, and place it on an oil-lined pan. Pour your favorite Italian tomato sauce on it, and some fresh basil leaves, plus a few pats of butter!
Place the pan in a preheated 400-degree oven and bake for 40 minutes.
You will think you are eating at a fine Italian restaurant.
This can easily be a vegan dish–skip the butter, and use a vegan tomato sauce.

CAULIFLOWER STEAKS #2 –
If you want a vegetarian (taste-like) version of pan-fried scallops, try this recipe for Cauliflower Steaks.
Cut the steaks into 3/4″ steaks.
Coate in olive oil and seasoned with Montreal steak seasoning.
Bake the cauliflower for 45 minutes in a 400º oven.
The cauliflower that is touching the pan will sear, creating a crust much like a pan-seared scallop.
The 45 minutes in the oven softens the cauliflower into an almost custard-like consistency–a soft white bite, with just a little resistance.
Melt some butter to dip your small bits into–and–this vegetable becomes a delicious gourmet treat!
