Comfort Food: Oven-Baked Chicken Thighs w/ Parm

Ingredients:

Oven-Baked Chicken Thighs w/ Parmesan Cheese

2 to 2 1/2 pounds of chicken thighs

1 stick butter, melted

2 cups fine dry breadcrumbs

3/4 cup grated Parmesan cheese

2 tablespoons fresh parsley stemmed and chopped

1 garlic clove minced

2 teaspoons salt

1/4 teaspoon pepper

1/4 cup sherry

1 10 3/4 oz. can of condensed cream of chicken soup.

Directions:

Blot chicken dry on paper towels

Dip in the butter.

Roll in mixture of breadcrumbs, grated Parmesan, chopped parsley, minced garlic, salt and pepper.

Press the crumb mixture onto the chicken thighs to hold.

Place them in a shallow, foil-lined oven pan, do not have pieces touching.

Bake at 350º for 1 hour.

Do not turn chicken.

Make a sauce out the soup and sherry.

Spoon the sauce over the chicken at 45min.in.

Bake an additional 15 minutes with sauce.

(May substitute 8 individual breasts pieces instead of thighs.)
