Dinner with Zane: The Pullman Restaurant

Zane dug up a gem when he found the Pullman restaurant in Glenwood Springs, Colorado.

The Pullman is a new breed of American eatery pairing imaginative, simple food with hospitality, comfortable surroundings and reasonable value.

Located in the fashionable RR district of downtown Glenwood Springs, The Pullman aims to change the restaurant landscape in this community and hopefully in the state and region.

The space is clean and spare with a rustic subway tile and distressed concrete atmosphere, making the spirit of the restaurant sophisticated but not pretentious. It is accessible on many levels: menu, value, and aesthetics. The Pullman is a place where a person could eat a number of times a week and feel good about the healthy fresh food and the options available.

Comments About Our Meal.

The spacious, open layout with plenty of natural light spilling in from the numerous windows created a pleasantly balanced atmosphere along with the darkly stained wood chairs, table, and décor. We sat next to a window at a small table for two, which gave a sense of privacy without feeling secluded.

Our waiter was younger than one would expect at a fine dining restaurant, however, he was polite, attentive, and knowledgeable. A young girl was shadowing him, training to become a waitress. While she was shy and needed more practice, the service was satisfactory.

Pickled Deviled Eggs

The bacon pickled deviled eggs were an excellent start. Slightly acidic, but the creaminess of the yolk, coupled with the maple gastrique, balanced out the acidity quite well.

Korean Short Rib Tacos with grilled vegetables and fresh lime juice.

The Korean short rib tacos were great, although slightly messy to eat. The meat could have been pulled into smaller pieces, but the combination of flavors and textures worked very well.

Mac and Cheese

Next up, mac and cheese with gruyere, white cheddar, and mustard sage breadcrumbs. The sage didn’t really come through, nor the mustard, but that didn’t matter too much after the first couple bites. The sauce and melted cheese on top made for a delicious pasta dish. Because it was rich and heavy, I’m glad we shared this one!

Roasted Chicken

My entrée, the roasted natural chicken, was phenomenal. As someone who eats chicken almost daily, it’s nice to have a preparation taste so amazing! Perfectly cooked and seasoned, the white meat of the breast was incredibly juicy. The local heirloom tomatoes gave a wonderful freshness to the dish.

Grilled Ruby Trout

The grilled ruby trout (my companion’s entrée) was very good. The fish was flaky and flavorful, and the cauliflower and potato hash made the perfect accompaniment.

Apple Crumble

To close out the dinner, we had a warm Paonia apple crumble. Simple, but spectacular! The spiced, roasted apple base was balanced perfectly with the almond crust and vanilla bean ice cream. The rum caramel topping was incredible.

Overall it was an excellent meal and experience.
