FOOD
South Louisiana’s
Courtbouillon

Ingredients:
1/2 cup vegetable oil
2 large onions, chopped
3 ribs celery, chopped
Bunch green onions, chopped
1/2 bell pepper, chopped
2 cloves garlic, minced
3 teaspoons Cajun seasonings
2 (16-ounce) cans tomatoes
1 quart fish stock (or clam juice)
6 slices of white fish (red snapper, cod, etc.)
4 thin lemon slices
1 cup dry white wine

Directions:
In a large heavy pot, sauté chopped vegetables in oil until soft. Stir in seasoning and tomatoes and simmer for 10 minutes. Add stock and cook slowly 30 minutes. Then add fish and simmer another 30 minutes. Lastly add lemon slices and wine, bring to a boil and serve.
