EASY PANTRY VEGETABLE SOUP

A PANTRY VEGETABLE SOUP IS SOOOO GOOOOD (and easy)!
Recipe:

—first we cooked some dried black-eyed peas from scratch, using a ham hock for flavor (using an insta-pot)

then we…

—opened up cans of our favorite vegetables and a large 28 oz. can of crushed tomatoes

—dump them into the same big pot, adding some crushed garlic and uncooked, diced potatoes at the same time

—season with salt and pepper (alt. add some hot sauce)

—simmer all for several hours (stirring often to keep the bottom from burning)

—AND 💥 you have some of the best homemade soup ever!
