1980’s Turkey Meatloaf

Turkey Meatloaf Recipe

Ingredients:

2 eggs

2/3 cup milk

32 Ritz crackers, crushed

1/2 cup chopped onion

4 ounces shredded sharp cheddar cheese

2 cloves garlic, minced

1 teaspoon salt

1/4 teaspoon pepper

1 1/2 lbs ground turkey

1/2 cup ketchup

1/2 cup brown sugar

1 teaspoon mustard

1 tablespoon Worcestershire sauce

PREPARATION:

Preheat oven to 350. Lightly grease a jelly-roll pan. Beat eggs. Add milk and crackers. Stir in onion and cheese. Add ground turkey, garlic, salt, and black pepper in a bowl. Mix well. Shape into a loaf and place on the prepared pan. Bake at 350 for 1 hour (60 minutes). Combine ketchup, brown sugar, Worcestershire sauce, and mustard to make the topping. Bake meatloaf in preheated oven for 30 minutes; remove from the oven and drain off liquids. Then spoon half of the topping over the meatloaf after 30 mins of baking. Return the loaf to the oven for 20 more minutes. Remove and spoon the rest of the topping over the meatloaf and return to the oven and bake for 10 mins more. The center of the meatloaf should read at least 160 degrees F.

If and when it does, remove finished. Meatloaf from the oven, let it rest for 10 minutes or more (the longer it cools, the more the meatloaf will hold together as a loaf).
