SPLIT PEA SOUP – An Elegant, Delicious, Special Treat!

Split Pea Soup

Ingredients:

2 cups (1 lb.) green split peas

1 ham hock with meat

2 quarts water

10 black peppercorns, cracked

1 small onion, chopped

2 cups chopped celery with leaves

3 carrots, chopped

1 cup milk or cream

2 tablespoons vegetable soup base

Directions

Soak peas in 2 quarts water for several hours or overnight. Bring to a boil in the same water, reduce heat, add ham bone and peppercorns, cover, and simmer for 1 hour. Watch to see that it doesn’t coo dry, if so, add more water. Add vegetables and vegetable soup base, then simmer for another hour. Remove ham bone, cut meat from it, discard bone and chop meat fine. Press the rest of the soup through a coarse sieve or food mill. ( didn’t sieve it, it was perfect without it. Add chopped ham, milk, and simmer for 20 minutes. Add salt if necessary.

Serves 6.
