Piña Colada Recipe

2 SERVINGS

  • 1 cup cream of coconut (canned, usually found in Hispanic foods)
  • 3/4 cup pineapple juice (I used canned juice)
  • 1/4 cup of rum
  • 2 cups ice
  • 1 ounce freshly squeezed lime juice (optional)
  • pineapple chunks (optional)
  • maraschino cherries (optional)
  • 1 In a blender, combine rum, pineapple juice, cream of coconut, and lime juice (if using) with ice and blend until the drink reaches a milkshake-like consistency.
  • 2 Pour into a Hurricane glass and garnish with pineapple slices and maraschino cherry.
